Avocado Lime Agua Fresca
- 1 ripe Hass avocado halved, stone removed, flesh scooped out and coarsely chopped
- 2 limes juice, plus extra sliced lime, to serve
- 1/4 cup agave syrup, or to taste
- 1/4 cup mint leaves, plus extra mint sprigs, to serve
- 1 1/4 l chilled sparkling mineral water
- Ice cubes or crushed ice, to serve
- Blend Hass avocado, lime juice, agave syrup and mint leaves in a blender until smooth.
- Add mineral water, blend until frothy, then check the flavour - add a little extra lime juice if agave syrup if required
- Serve poured over ice, garnished with lime slices, mint leaves and a sliver of avocado.
