Rockmelon, Brie & Prosciutto Wedges

  • 1/2 Rockmelon quartered, cored, cut into wedges
  • 200 g brie, cut into long thin slices
  • 24 baby rocket leave
  • 12 shaved slice of prosciutto, halved lengthways
  • Balsamic glaze, to serve


  1. Place a slice of brie and a rocket leaf onto each rockmelon wedge. Wrap a strip of prosciutto around wrap, cheese and rocket.
  2. Place onto a plate or platter. Drizzle with balsamic glaze if preferred and serve.
